Smoked Salmon and Asparagus Quiche Recipe

Ingredients

  • 1 pre-made pie crust (9-inch, or homemade if you prefer)
  • 4 ounces smoked salmon (cut into bite-sized pieces)
  • 1 cup asparagus (trimmed and cut into 1-inch pieces)
  • 1 cup shredded Gruyère or Swiss cheese
  • 4 large eggs
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1/2 cup milk
  • 1/4 cup green onions (chopped)
  • 2 tablespoons fresh dill (chopped)
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for sautéing asparagus)

Instructions

1. Preheat the Oven

Preheat your oven to 375°F (190°C).

2. Prepare the Pie Crust

If using a pre-made pie crust, place it in a 9-inch pie dish and crimp the edges. If you made your own crust, roll it out and place it in the pie dish. Prick the bottom of the crust with a fork to prevent bubbling.

3. Blind Bake the Crust

  1. Line the pie crust with parchment paper and fill it with pie weights or dried beans. Bake for 10-12 minutes until the edges start to turn golden.
  2. Remove the weights and parchment paper, then bake for another 5 minutes until the bottom is set. Remove from the oven and let it cool slightly.

4. Prepare the Asparagus

In a skillet, heat the olive oil over medium heat. Add the asparagus pieces and sauté for about 3-4 minutes until they are tender-crisp. Remove from heat and set aside.

5. Make the Custard Filling

In a medium bowl, whisk together the eggs, heavy cream, and milk until well combined. Season with salt and pepper to taste.

6. Assemble the Quiche

  1. Sprinkle the shredded Gruyère or Swiss cheese evenly over the bottom of the pie crust.
  2. Add the sautéed asparagus, smoked salmon pieces, and chopped green onions, distributing them evenly.
  3. Pour the egg mixture over the fillings, making sure everything is well covered. Sprinkle the chopped fresh dill on top.

7. Bake the Quiche

Bake in the preheated oven for 30-35 minutes, or until the quiche is set and slightly golden on top. The center should be just set but still slightly jiggly.

8. Cool and Serve

Allow the quiche to cool for about 10 minutes before slicing. Serve warm or at room temperature, garnished with extra dill if desired.

Tips

  • Add More Veggies: Feel free to add other vegetables like spinach, leeks, or bell peppers for added flavor and color.
  • Use Different Cheeses: You can substitute Gruyère with cheddar, feta, or any cheese you prefer.
  • Make Ahead: This quiche can be made ahead of time and reheated in the oven or microwave before serving.
