Smoked Salmon-Stuffed Peppers Recipe
Ingredients
- 6 mini bell peppers (halved and seeded)
- 6 ounces smoked salmon (finely chopped)
- 4 ounces cream cheese (softened)
- 1/4 cup sour cream
- 2 tablespoons fresh dill (chopped)
- 1 tablespoon lemon juice (freshly squeezed)
- 1/2 cup cucumber (diced)
- 1/4 cup red onion (finely chopped)
- 2 tablespoons capers (drained)
- Salt and pepper to taste
- 1 tablespoon fresh chives (chopped, for garnish)
Instructions
1. Prepare the Peppers
- Preheat your oven to 375°F (190°C).
- Halve the mini bell peppers lengthwise and remove the seeds. Place them cut side up on a baking sheet lined with parchment paper.
2. Make the Filling
- In a medium bowl, combine the cream cheese, sour cream, lemon juice, and fresh dill. Mix until smooth and well combined.
- Add the chopped smoked salmon, diced cucumber, red onion, and capers to the cream cheese mixture. Stir gently until all ingredients are evenly incorporated. Season with salt and pepper to taste.
3. Stuff the Peppers
Spoon the smoked salmon filling into each mini bell pepper half, filling them generously.
4. Bake the Peppers
Bake in the preheated oven for 10-12 minutes, or until the peppers are slightly softened and the filling is warm.
5. Serve
Remove the peppers from the oven and let them cool for a few minutes. Garnish with chopped fresh chives and serve warm or at room temperature.
Tips
- Add Some Crunch: Top with toasted breadcrumbs or crushed nuts for extra texture.
- Make Ahead: Prepare the filling ahead of time and store it in the refrigerator. Stuff the peppers and bake just before serving.
- Switch It Up: Use large bell peppers for a more substantial dish, or try using sweet mini peppers for a sweeter taste.
