Smoked Salmon Risotto Recipe

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 ounces smoked salmon (cut into bite-sized pieces)
  • 4 cups chicken or vegetable broth (kept warm)
  • 1/2 cup dry white wine
  • 1 tablespoon olive oil
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 cup heavy cream (optional for extra creaminess)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 1/4 cup fresh dill (chopped)
  • Salt and pepper to taste
  • 1 tablespoon butter (for finishing)

Instructions

1. Prepare the Broth

In a medium saucepan, keep the chicken or vegetable broth warm over low heat. This is important for gradually adding to the risotto.

2. Sauté the Aromatics

  1. In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes soft and translucent.
  2. Add the minced garlic and sauté for another minute until fragrant.

3. Toast the Rice

Add the Arborio rice to the skillet and stir well to coat each grain with oil. Cook for about 2 minutes, stirring constantly, until the rice is lightly toasted and has a slightly translucent edge.

4. Deglaze with Wine

Pour in the white wine and stir constantly until the wine is fully absorbed by the rice.

5. Cook the Risotto

Begin adding the warm broth, one ladleful at a time, stirring frequently. Wait until the broth is mostly absorbed before adding the next ladleful. Continue this process until the rice is creamy and al dente, which should take about 18-20 minutes.

6. Add the Smoked Salmon and Finish the Risotto

  1. When the rice is almost done, gently fold in the smoked salmon pieces, lemon juice, and lemon zest.
  2. Stir in the grated Parmesan cheese and heavy cream, if using, until the cheese is melted and the risotto is creamy.
  3. Season with salt and pepper to taste.

7. Finish with Butter and Herbs

Turn off the heat and stir in the butter and fresh dill until the butter is melted and the herbs are well combined.

8. Serve

Serve the risotto immediately, garnished with extra fresh dill and a sprinkle of Parmesan cheese if desired.

Tips

  • Customize the Flavor: Add other ingredients like peas, asparagus, or baby spinach for added flavor and texture.
  • Use Good Quality Broth: A flavorful broth makes a big difference in risotto, so use the best quality you have on hand.
  • Stir Consistently: Risotto needs frequent stirring to release the starches and achieve a creamy texture.
