Salmon and Cucumber Bites Recipe
Ingredients
- 1 large cucumber (English cucumber works best)
- 8 ounces smoked salmon (thinly sliced)
- 4 ounces cream cheese (softened)
- 1 tablespoon fresh dill (finely chopped)
- 1 tablespoon fresh chives (finely chopped)
- 1 tablespoon lemon juice (freshly squeezed)
- 1/2 teaspoon lemon zest
- Salt and pepper to taste
- Optional garnish: Additional dill, chives, or capers
Instructions
1. Prepare the Cucumber
- Wash and dry the cucumber. Slice it into rounds about 1/4 inch thick. You should end up with about 20-30 slices, depending on the size of the cucumber.
2. Make the Cream Cheese Mixture
- In a small bowl, combine the softened cream cheese, fresh dill, chives, lemon juice, and lemon zest. Mix well until smooth and creamy. Add salt and pepper to taste.
3. Assemble the Bites
- Spread a small dollop of the cream cheese mixture on each cucumber slice using a spoon or a piping bag for a neater presentation.
- Cut the smoked salmon into small pieces or strips and place a piece on top of the cream cheese layer on each cucumber slice.
4. Garnish
Add a small sprig of dill, a sprinkle of chives, or a few capers on top of each salmon slice for added flavor and presentation.
