Smoked Salmon Tart Recipe

Ingredients

  • 1 pre-made puff pastry sheet or pie crust
  • 6 ounces smoked salmon (thinly sliced)
  • 1/2 cup crème fraîche or sour cream
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1/2 cup Gruyère or Swiss cheese (shredded)
  • 1/4 cup fresh dill (chopped)
  • 1/4 cup fresh chives (chopped)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for brushing)

Instructions

1. Preheat the Oven

Preheat your oven to 375°F (190°C).

2. Prepare the Tart Crust

If using puff pastry, roll it out on a lightly floured surface to fit your tart pan. Place the pastry into the pan, pressing it against the sides. Trim any excess dough. If using a pie crust, roll it out and place it in a tart pan. Prick the bottom with a fork to prevent bubbling.

3. Blind Bake the Crust

  1. Line the crust with parchment paper and fill it with pie weights or dried beans. Blind bake for about 10-12 minutes, or until the edges start to turn golden.
  2. Remove the weights and parchment paper, and bake for an additional 5 minutes until the bottom is set. Remove from the oven and let it cool slightly.

4. Prepare the Filling

  1. In a medium bowl, whisk together the crème fraîche, heavy cream, eggs, lemon juice, and lemon zest until smooth. Season with salt and pepper to taste.
  2. Stir in the shredded Gruyère cheese, chopped dill, and chives until evenly distributed.

5. Assemble the Tart

Layer the smoked salmon slices evenly over the bottom of the pre-baked tart crust. Pour the filling mixture over the smoked salmon, spreading it evenly.

6. Bake the Tart

Brush the edges of the crust with olive oil for a golden finish. Bake the tart in the preheated oven for 25-30 minutes, or until the filling is set and the top is lightly golden.

7. Cool and Serve

Allow the tart to cool for about 10 minutes before slicing. Serve warm or at room temperature, garnished with additional fresh dill or chives if desired.
